Do you ever get fed up with a lettuce salad -try something a little different but very simple – a nice side dish for a chicken or beef dish or with your barbecued steak.
To make the dressing you will need the following ingredients:
- 1/3 cup neutral oil
- 4 thinly sliced garlic cloves
- 2 spring onions, just the white, finely chopped (reserve the green stalks for the garnish)
- 1/4 cup lemon juice
- finely grated zest of 2 lemons
- 1-2 teaspoon finely chopped red chilli, to taste
- salt & ground black pepper
Place the oil, garlic,spring onion whites and chilli into a small pot and cook over a very gently heat until the garlic is softened but not browned 9 about 10m minutes). Mix in the lemon zest and juice – season to taste with salt and pepper. Take one head of broccoli and chop as you normally do – don’t chop all of the stalk off as this is good eating – it really is tasty! Pop the broccoli into a pot of boiling salted water and cook for 2 minutes. Drain and refresh under cold water, drain again and pat dry. Barbecue over medium heat until tender and lightly charred – about 4 mins each side.
When easy to serve, toss the Garlic Chilli Dressing through the broccoli and garnish with shaved parmesan, parsley or coriander and the reserved spring onion greens. Serve immediately.
